Blueberry Almond Cake


  • 200g Soft Butter

  • 200g Castor sugar

  • 4 Eggs

  • 100g Ground Almonds

  • 100g Self raising flour

  • 5ml Baking powder

  • 150g Blueberries

  • 25g Flaked almonds

  • Icing Sugar for dusting


  1. Preheat the oven to 180ºC & grease a 23 cm round cake tin or square cake tin

  2. Cream butter & sugar, add eggs and mix well

  3. Add the ground almonds, self raising flour & baking powder and mix until well combine

  4. Spoon the mixture into greased cake tin and level the top.

  5. Scatter the blueberries evenly on the top and top with flaked almonds

  6. Bake for 35-40 minutes, until a cake tester comes out clean

  7. Allow to cool, remove from cake tin onto serving board and dust with icing sugar


Other summer berries, like raspberries or a mixture of berries work well too
