  • 4 Egg Whites

  • Pinch of Salt

  • 300g Castor Sugar

  • 2.5ml Vanilla extract


  1. Preheat oven to 140ºC and line baking trays with baking parchment

  2. Place the egg whites and pinch of salt into a large clean bowl and whisk until soft peaks form. ( I use my Kenwood Chef for this)

  3. Gradually add the castor sugar, a tablespoon at a time and continue mixing until you have a silky meringue which forms stiff peaks when the whisk is lifted. 

  4. Add the Vanilla extract by folding in with a large metal spoon

  5. You can either just spoon mounds of meringue onto your lined baking trays or pipe on - as you prefer. 

  6. Dip a metal skewer into your chosen colour food colouring and swirl through the meringue.

  7. Bake for 30 minutes, until crisp.

  8. Turn off the oven and allow to cool with the door slightly open
